MOONCAKE Recipe - Bánh Trung Thu (Bánh Nướng)

This recipe is adapted from traditional Vietnamese mooncake recipes with ingredients that are easier to find in Western countries.

Ingredients (makes 4x200g cakes; or 10x100g, or 8x150g cakes)
*For the sugar syrup:*
1 cup brown/caster sugar (180-200g)
1/2 cup water (120ml)
1/4 tsp lye water
1/2 tbsp lime juice
*For the dough/crust*
320g all-purpose flour
200g sugar syrup
50ml vegetable oil
1 tsp lye water
*For the filling*
150g mixed nuts, roughly chopped
100g candied lime peel, roughly chopped
100g candied orange peel, roughly chopped
50g ginger jam
150g Chinese sausages, fat rendered and diced
4 tbsp sesame seeds
1 tsp sesame oil
3 tbsp cooked glutinous rice flour
3 tbsp simple/corn syrup

Nguyên liệu: cho 4 bánh 200g, 10 bánh 100g hoặc 8 bánh 150g
*Nước đường bánh nướng*
1 chén đường (180-200g)
1/2 chén nước (120ml)
1/4 mcf nước tro tàu
1/2 ms nước cốt chanh
*Phần vỏ bánh*
320g bột mì
200g nước đường bánh nướng
50ml dầu ăn (3-4 ms)
1 mcf nước tro tàu
*Phần nhân*
150g các loại hạt làm bánh (hạnh nhân, hạt điều v.v.)
100g mứt vỏ cam
100g mứt vỏ chanh
50g mứt gừng dẻo
150g lạp xưởng
4 ms mè rang
1 mcf dầu mè
3 tbsp bột nếp chín (bột bánh dẻo)
3 tbsp nước đường bánh dẻo
